  • Some food pics

    It's been awhile since I've posted any pictures. Now that I'm slowly getting comfortable with my laptop, I've installed the s/w that came with my camera to enable me to download pictures. I also picked up a memory card reader as well over the holidays.

    The Christmas dinner went well. No drama, lots of laughter (thanks to my brother) and full bellies. I made a few things ahead of time although I think I could have done with one less dish. I coudn't take that many pictures because everyone was waiting. I also didn't plate the soup (someone was stingy with the meatballs). The soup is wintermelon with crab meat. The stock is from pork bones, lean pork, dried scallops, mushroom stems, ginger and I threw in some left over celery leaves. The pork meatball has soy sauce, corn starch, egg white, sesame seed oil, a bit of water, a bit of pepper and some finely chopped dried salted radish that I rehydrated. I made the stock 1 day ahead to save some time.

    The beef stew was a bit of a mess. I had some frozen lean angus meat from the farmer's market. I used two bags only to find the second bag mislabelled. It was strips of beef. Oh well... c'est la vie. I made this the day before as well.

    The poach chicken was actually drumsticks, thighs and breasts. I poached them in water seasoned with a bit of salt, ginger, green onions and some celery leaves (from the beef stew). I then pulled the meat out and served it with ginger, salt, green onions with oil. I save the poaching liquids and bones to make some more chicken stock.

    I also made a chow mein with pork, shrimp, musrhooms and some baby Shanghai bak choi. This was the only dish I really cooked at my dad's place. I chopped all the garlic, scallions etc... ahead of time.

    The dessert was red bean soup. But my brother brought a cake so we had that instead. Grrr.... I didn't take a picture of that. The travelling chef will now rest. I still have leftover beef stew in my fridge along with left over turkey dinner. It'll take awhile to finish that as I'm eating out the next couple of nights. I guess I'll have turkey for breakfast.

    p.s. Xanga in a Mac / Safari seems a bit different. When I choose a photo, it used to display the photo with my text. Now when I choose a photo, it just gives me some html code to paste in with my text. I guess I'll have to get used to this. It's the same thing with adding a link.

  • @yang1815 - I also downloaded Firefox but wanted to give Safari a chance.  If it doesn't work out I'll switch back to Firefox.  

  • @ElusiveWords - I switched to Firefox for Xanga pretty much a long time ago haha.

  • I liked the pictures Matt. I too remove the meat off the thighs and drumsticks and stir fry that along with vegetables. It seems like you had a very good time.

  • I use Xanga with Firefox on Mac as well.  It doesn't seem to work well with Safari.

    Also, the food looks good :)   When I make that soup, there's much less meat, much more wintermelon and much more dried scallop and pork bone.  Although I have to admit, the big meatballs look good haha.

  • Glad that food were plentiful and delicious at the Christmas gathering.  Did you cook all of the above? If so, I think your little nieces and nephews would call you the "super uncle" instead of the "chow mien" uncle. LOL

    @arenadi - ok, I think I'll switch to Firefox which I've used in the Windows world.  I didn't plate the soup which would have had more wintermelon and crab meat.  I took out the dried scallop since it didn't have any more flavor.  I think for next time, I'll add some for the soup.  I do take out all the pork bones and filter out the little bone fragments. 

    @Dezinerdreams - yes, everyone seemed to enjoy it.

    @christao408 - yeah, it was a relief.  Now to add some more pictures.

    @criticaldamage15 - hahahaha... it's just pictures.  Once you start learning how to cook, it's not that hard.

    @Fatcat723 - now to sort out the leftovers. 

    @CurryPuffy - hahaha - it's just plain ol' Uncle Matt (it's actually my bf's nephews and nieces)

  • @ElusiveWords - Ahhh okay I see :)   I think I eat it very country-style; which is everything still in there.  I even leave the pork bones in there, so you can gnaw on those too.  I have some in my refrigerator still, I think I'll have some this morning in fact.

  • @arenadi - I got some roast pork bones in the freezer.  It still has some meat in there.  I think I'll use that to simmer some black eye peas sometime next week.  

  • Yum, the feast looks delicious!!  You should use Firefox on a Mac to create your entries.  You won't have that problem with links and pics.

  • @brooklyn2028 - ok... that's 3 recommendations to switch from Mac users.  I shall do that.

  • love pork meat balls.  as for the beef stew, it'll taste better if you leave it overnight or two.  tastes great with rice.

  • @agmhkg - thank you... the pictures always look good.  There were no reports of tummy aches so my cooking must be ok.

    @kachino - my brother is that way too... I had to ease up on crabmeat. 

    @kunhuo42 - thanks... I hope you had a good vacation.

    @CareyGLY - send plane ticket.  I can always help with the eating part. 

    @rudyhou - yeah, that's why I made the beef stew a day ahead too.  If you don't mind the calories, the beef stew also taste great with pasta (fettucini). 

    @orchidgrass - I love wintermelon... it's just so easy to prepare and goes well with a lot of things.

  • Hello =)  The food looks great, I usually make the 8 treasure wintermelon soup.  Will have to try your version, especially on a rainy day =)

  • Firefox is way better for xanga! Safari just effs it up for me. The worst, in my opinion, is internet explorer. I had to blog on a PC this week and it was all kinds of disastrous. haha. Your food always looks amazing!
