  • Meat and Veggies

    When I have nothing to write about – there’s always food!

    These are actually from the summer.  I had some extra vegetables at the end of the week.  There was about 3/4 of a cauliflower, some onions, carrots, garlic and potatoes.  I roasted them with some garlic, olive oil and salt / pepper. 

    I rummaged through my freezer the previous night and found a skirt steak.  I just left it in
    the fridge to defrost and then marinated it with soy sauce, garlic and pepper. 

    I actually started to cut it into strips and then changed my mind.  I simply put it in a hot pan
    (the one with ridges), let it sear (the smoke and smell stayed in my condo for a couple of days)
    and then let it rest.  I just sort of poked at it to determine the wellness.  Some of the parts near
    the end were medium while the thicker parts were medium rare. 

    It’s a relatively simple meal, the roasted cauliflower was good.  The garlic in the supermarket
    always comes in a package of three.  So I just roast them when I know I can’t finish all of it. 
    I think the whole thing took about an hour.  But there was lots to clean up.
    Another meal that is quite simple to make is simply a pasta salad with veggies.  I didn’t have
    macaroni so I used noodles.  I blanched broccoli, carrots and also poached some shrimp.  I added a red pepper as well.  For the dressing (not pictured here), I just used a simple lemon juice, olive oil,
    mustard, salt / pepper.   I guess it would be healthier with whole wheat pasta. 

    Simple meals for a week night when you don’t have time to cook.

  • Looks yummy Matt. I’m going to give your noodle salad a try.  I roasted some brussel sprouts the other day…they were delicious.

  • Simple meals are often some of the best.

    One of my favorites is something called “hobo stew” and it’s just taking a bunch of stuff and putting it into tinfoil, folding it up and throwing it into a campfire. 

  • My choice is the pasta salad – it looks delicious. Oh be still my rumbling tum ! Lol  (It’s only 7.30 AM here) Time for some breakfast me thinks. 

  • Cleaning out the frig and making simple meals is great for me. I have to push myself to cook for myself. I do like te pasta salad with whole wheat pasta and any left overs.

  • Yummy! I love simple recipes. The very last thing I feel like doing when I come home is cooking a big, fancy dinner.

  • Whole wheat pasta may be healthier but white pasta is so much tastier!

    @Wangium - it is simple otherwise I won’t be making it.  The veggies were simply cut up and sprinkled with olive oil.  I added salt and pepper, stuck in the oven and that was it. 

    @vsan79 - thanks, I can’t afford to spend hours cooking on a week night.

    @arenadi - hobo stew…  interesting, I guess as long as the cooking times are correct (meat and veggies), it should turn out ok.  I’ve never tried cooking on an open flame yet.  I’ve reheated food over a campfire before but not cooked them from scratched.

    @Chatamanda - the salad was actually good although it would have been better with macaroni, penne or those spiral ones.

    @Fatcat723 - cooking on a weekday can be a pain especially when I get home around 8.  I try to make big meals on the weekends and have leftovers.  If I can cook something in 60 mins or less, I declare victory. 

    @TheCheshireGrins - yes, I’m always on the lookout for simple but nutritious meals. 

    @agmhkg - I agree.  I think it must be tough on you traveling across different time zones.  Your tummy must be confused sometimes. 

    @kunhuo42 - Aaron… where are the pictures?    I love winter melon soup.

    @brooklyn2028 - I have to confess that I still can’t get used to the taste and texture of whole wheat pasta yet.
