Dry Entry
I made muffins on the weekend. I didn't have my organic whole wheat flour anymore. But I remember having a bag of flour from ages ago. I know flour will get stale but this still looked ok. I sifted it though to make sure there wasn't any extra "protein" in there. I threw in my usual riped (almost black) bananas and hoped for the best. It looked really dry when I mixed it up so I added a bit more soy milk and a bit more oil.
It came out of the oven smelling nicely. I closed my eyes, inhaled the glorious smell of freshly baked goods and made some tea. When the tea was ready, I started to salivate and took my first bite. The muffin was so dry I almost gagged. It pretty well absorbed every molecule of saliva in my mouth. I had to sip some water so I could swallow it. Now I know what it's like to eat paper towel.
I brought 2 to work for lunch the next day. I needed a large cup of coffee to swallow it. I didn't want to waste the rest. So every day, I make muffin toast. I cut it in half and toast it - sort of like an English muffin.
I just had the one above. It's dry and I needed a glass of water with it.
I even thought of just feeding it to the birds in the park. But I don't know where
they will get water. I figured as they fly, they'll be choking on these things and drop
out of the sky. So I'm eating them. Maybe I should send them to Chris so he can try it.
Perhaps he will be able to tell me why it's so dry. I think he needs to try about 4 of them
to be absolutely sure.

you could also use them as levelers, if your furniture is ever uneven... remember, donuts tomorrow!

Hahaha, I had a good laugh reading this. I'm not sure Chris will be able to give you a definitive answer on just 4 muffins, though. Perhaps you'd better use up the rest of that flour and make another batch.
Banana English Muffin Toast sounds tasty; just dunk them in your coffee, like a Biscotti! I must admit I laughed out loud when I saw the picture!

What did you use for fat? Butter? Oil?
Ah indeed what was the fat part of the recipe? I love muffins and bananas and banana muffins. yummy
maybe you can do banana-muffin french toast? that would be yummy, and would help the moistness problem i think since you will soak it in egg.
haha you remind me of my coworker.. every time she has something she doesn't want to eat, she tries to pass it off on the rest of us. it usually goes something like "ooh, this orange is very sour... here, do you want some?" it always makes us laugh and sigh. as for your recipe... i think you need to use regular milk instead of soy, for one. actually, i have a really good recipe for banana bread that calls for sour cream instead of milk -- this helps make the bread really moist.

@Wangium - I toasted it and put peanut butter. It was the only way I could eat it. It does look a bit like taro. What happened to your pie?

Lol, this entry makes me laugh. You're so good and not being wasteful. I would've given it to the birds, ducks, fish, raccoons,...as long as I don't have to eat another bite. Guess I'm just not as thoughtful as you when it comes down to their preferences.
@ElusiveWords - Sure, why not? I could really use a muffin--there's a door at my work that never stays open.
@ElusiveWords - That might be the problem. From what I can tell in various recipes, oil and butter behave differently and might affect the outcome. Most banana muffic recipes I've seen use melted butter, I think. If not, the other issue might be the quantity of banana. Did you measure the amount of mashed banana pulp or just count by number of bananas used?
@christao408 - Oils and butters work very differently in recipes; you have to compensate for the switch each and everytime. Canola oil is a bad substitute for a solid as it is; you're much better off using a good vegetable oil. Canola is cheap and thin, so it's good for frying, but bad for baking. Melted butter generally works best; the only time I've found it worth switching oil in for the butter is in a few cookie recipes, and I usually have to experiment a LOT to get them balanced again.
They look really yummy though...
if you get tired of eating them, you could always use them to dry yourself. JK
I love what I am seeing. It makes me long for my oven which I gave to my older sister.
Well, at least you made something and it looks decent. At times like these, a dog comes in handy, he/she can always run to the drink from the toilet if the water bowl runs out!
On the other hand, don't get sick!

@Vynor - you won't like how it tasted though, it was very, very dry.
@AzureRecollections - hahaha... if the lid is down on the toilet, that dog is gonna suffer.
Ohh. Anyway, a glass of water or milk to accompany will do.

I just threw some away because they were old and dry. Kind of like Sarah Palin!
