  • quick update

I'm not feeling great mood wise.  So what better time than now for some comfort food. I made some pasta with tomato sauce and sausages.  I threw in some tomatoes, feta cheese and olives that were sitting in the fridge to give it a bit of Mediterranean feel.

Chicken pho and some spring rolls.

For the next couple of weeks, I'll be "daddy sitting".  This means I'll be staying at his place while sis is traveling on business.  It'll be an interesting experience.  I haven't slept in the house for ages.  I got a quick briefing on how to operate the coffee maker, when to throw out garbage and some of the household routines.  Since there's only 1 TV, I won't be watching anything (I don't even know how to operate his remote control).  I'm not sure what to expect but I hope things go smoothly.

  • Best wishes Matt. Blog if you need us. <3 your food looks amazing

  • @macphoto - thank you.  I think I'll be ok - just feeling a bit overwhelmed lately.

  • You're awesome, Matt! I think you're doing a lot of good and it's only natural that you're feeling down because you're overextending yourself.

The pho looks mouthwatering. I've never seen spring rolls so white before - looks very crunchy, yum.

  • Those tomatoes will bring some positive ions back for sure. You may watch tv via the internet, I suppose.  Have a good Sunday!

  • Pho & Spring rolls looks yum! :D

  • @stepaside_loser - thanks Andrew, I'm not convinced that I'm awesome (maybe if you repeat that a hundred times...).  I think part of the problem is trying to find time to do everything and not being able to.  Something has to give when you prioritize.

@CurryPuffy - I think that's what I'm gonna do (or just keep working).

@oxyGENE_08 - more pho madness for you!

@tsotofu - mmm.... can't you just taste that pho now?

  • @ElusiveWords - Yeah, that's true about not being able to do everything at the one time. You're awesome x 1,000.

  • looks delicious, especially the pho!  i've always wanted to learn how to make pho.  hopefully things go well with your dad; i'm sure he'll appreciate all the good food you will cook him (but avoid the coffee oatmeal, i think)!

  • I hope that things go smoothly as well! Good luck :)

  • @stepaside_loser - lol... thanks, I'll keep coming back to reread this comment whenever I feel down.

@kunhuo42 - hahaha... I think he would not appreciate my creativity.

@yang1815 - @TheCheshireGrins - thank you both, I'm keeping my fingers and toes crossed!

  • I hope your stay with your dad will be a blessing for both of you  my friend. I will be thinking of you.

Hey Matt, how do you make the chicken pho? I love soups like that.

  • If there was every food that could improve my mood, Pho is it!  I hope your time with your Dad goes well.  Perhaps it will lead to some inspirations for your great novel.  The one I know you will be writing one of these days.
