Dressing up Food
There are times when I buy take out food. Recently I got some meatloaf from the Healthy Butcher. It’s a local store that specialize in organic meats and food. I don’t make meat loaf and I thought it would be good to have a change from my own cooking. But the meatloaf looked a bit bare and dry. So I thought it would be good to just dress it up a bit. It’s a very simple thing to quickly improve take out food.
Here’s what a slice of meatloaf looked like. It has some cheese on the top.
I sliced up some onions and caramelized them over low heat. As it cooks, you can add a bit of water or stock near the end if it looks like it’s getting too dry. You just have to be patient with this. Turning up the heat doesn’t really help. It’ll be sweet and soft when it caramelizes.
Slice up some mushrooms.
I used a separate pan to saute the mushrooms w/ olive oil and a bit of garlic. I also added salt, pepper and some paprika.
I added a bit of garlic to the onions (optional).
Then threw in the mushrooms.
Take your favorite tomato sauce and pour it into the pot.
I added the meatloaf as well, covered the pot and & gently simmered them. I uncovered it after a few minutes and waited till the meatloaf absorbed the sauce and the sauce was a bit thicker.
Since I was hungry, I added some lots of pasta.
All you have to do afterwards is eat. The meatloaf was nice and soft but still had a lot of texture and flavour. I had lots of pasta and sauce leftover which I used for dinner the next day.
I also cook this for my dad since it’s easier for him to eat soft foods. The tomato sauce with onions adds some vegetable to his diet as well. Sometimes I’ll finely dice carrots into tomato sauce. When it cooks down, it’ll just blend into the sauce. It’s just another way to increase his intake of vegetables.

This is a good quickie recipe; I got some pasta sauce at home, all I need are mushrooms and onions!
@kachino - are you hungry? Maybe I should post some pictures of fried rice? How about a stir fry of beef and veggies? Congee? Noodles?
@CurryPuffy - my cooking is very simple especially during the week days when I am pressed for time. If I have to cook on a weekday, I try to keep prep and cook time to an hour. Otherwise, it’s leftovers, sandwiches and even cereal.

I happen to be a meatloaf lover. People look at me when I am at the local Amish Restaurant and order meatloaf. They have everything in it that you described – well no pasta – and then cover it with a beautiful tomato sauce. Add the home mate mash potatoes and veggies —ok I am making myself hungry.
You know Mattie, you are too cute. I was laughing the whole time I was reading this. You bought the meat loaf, so you wouldn’t have to cook and have something different, but seems like you spent time cooking any way!
It looks delicious and I know it had to have tasted a little chinese with the mushrooms and garlic and onions. I need to take some food to a friend tomorrow, i am gonna do this and save some for myself before I take it there.
I have never understood the why of meatloaf, but it looks good the way you prepared it.

I’ve never shopped at The Healthy Butcher. I always feel it’s too “froo froo” for me and expensive (?)… The meals looks delicious though. Is it home made tomato sauce?

@Fatcat723 - we’ve never had meatloaf when I was growing up – well, maybe once. It wasn’t something my mom made.
@ZSA_MD - hahaha… I guess it saved me time to cook the meatloaf (I’ve never cooked meatloaf before).
@Roadkill_Spatula - I didn’t grow up w/ meatloaf but this meatloaf was flavourful. I guess it’s that soft meaty texture that people like.

@brooklyn2028 - the Healthy Butcher is pretty good actually, the staff are friendly. I ask a lot of questions and the staff don’t mind answering them. I don’t eat a lot of meat so I just try to eat better meat (I guess I will never be a vegetarian). The sauce was from the Liberty Village farmer’s market. I got a case to tide me over the winter.
looks delicious! i’m always trying to think up ways to recycle leftovers into new dishes. most of the time things turn into soup… but that’s a great idea for old meatloaf! i would have crumbled the meatloaf into the sauce and just called it pasta, though =)
@kunhuo42 - it was pretty good and the tomato sauce went very well with it. Recycling leftovers can be demanding. I think stews, soups & casseroles are good for it. My mom used to freeze small servings of leftover rice. When she had enough, she made fried rice with it.

@bleuzeus - believe it or not, I think cooking can be therapeutic in some ways. I get a chance to experiment, I like the rhythm and discipline in slicing and dicing food as well as the creative side of it. Of course, I always call my mistakes an experiment.
